Trahanas soup with mushrooms

Wild mushrooms have always been abundant in the mountainous forests of Epirus, and locals were trained to handpick and use them to enrich their everyday diet. Still, mushrooms are dangerous if you cannot fully identify the non-edible ones. As the Greek folk say, “Pick every wild green you see, but only the wild mushrooms you know.” In those days, it’s possible that Epirotes only used a few species in their cuisine to ensure their safety. Today, wild mushrooms are picked and packaged by professionals, so combining various species to make your trahanas soup as savory and rustic as you like is easy.

Trahanas soup with mushrooms


To make this recipe, you can use three or four different mushroom types you can find in any store. However, it’s worth looking for more exotic species to enjoy your trahanas in all its gastronomical glory.

  • 300 gr fresh mushrooms (chanterelles, porcini, black trumpets, etc.), finely chopped
  • 1 onion, finely chopped
  • 100 gr gluten-free sweet trahanas
  • 1 garlic clove, finely chopped
  • Olive oil (for sauteing)
  • Fresh thyme leaves (to preference)
  • Fresh rosemary leaves, finely chopped (to preference)
  • 2 dried laurel leaves
  • 1 small glass of white wine
  • 250 ml milk
  • 250 ml water
  • Salt (to preference)
  • Freshly ground pepper (to preference)
  • Bukovo (to preference)


  1. Place a cooking pot on high heat, add some olive oil, and saute the finely chopped onion for 2-3 minutes. Add the garlic and the mushrooms and saute until they are reduced in size. Pour the wine to reduce the heat.
  2. Add the thyme, rosemary, laurel, salt, pepper, bukovo, and water to the pot. Bring to a boil and let the stew cook for 5 minutes.
  3. Set the heat to medium, and add the trahanas and milk. Bring to a boil and cook for 10 minutes.
  4. Serve the trahanas soup hot.
