Pancakes with feta

Traditional Metsovite pancakes, fluffy and filled with feta cheese!

Before cooking...

If there was a single delicacy taking us back to our childhood, that would definitely be pancakes. In older times, they were prepared as a quick and energizing (especially when paired with honey) family breakfast. These Metsovite pancakes are more fluffy than usual, and the batter is enhanced with feta cheese that goes perfectly with a pure mountain honey.

Pancakes with feta


  • 240 g all-purpose flour
  • 6 g active dry yeast
  • 280 g water, lukewarm
  • 200 g feta cheese, crumbled
  • Salt (to preference)
  • Olive oil (for frying)
  • Honey (for serving)

Note: Lukewarm water activates the dry yeast and makes the batter rise. If it’s cold, the yeast will remain idle. If it’s hot, the yeast will be spoiled.


  1. Mix the flour, water, and yeast in a large bowl until you have a thick batter.
  2. Add the salt and the crumbled feta to the batter and mix. Cover the batter with a towel and leave it in a warm place until it doubles in size.
  3. Place a frying pan on high heat, add olive oil (enough for frying), and heat it until it shimmers.
  4. Scoop some batter with a ladle and pour it into the frying pan. Add a few more scoops, depending on the pan size. Don’t overload it because the temperature of the olive oil will drop. After a little bit, turn the pancakes upside down. When they are golden brown on both sides, place them on a platter laid with absorbent paper to strain the excess olive oil. Repeat until you’re out of batter.
  5. Serve the pancakes hot with your favorite honey on top.

Thanks to the addition of feta cheese to the mixture, as they like it in Metsovo, these traditional pancakes are even more delicious and filling!

A few kilometers from Metsovo, between Valia Calda and the Vikos-Aoos National Park, lies the utterly enchanting Aoos Springs Lake.
